Cheese
Adams Alpine
A smooth yet flavorful cheese with small eyes which merges the traditional flavor of the Alpine style cheeses to the unique territory of the Mt Adams region.

Pahto
A fusion of traditional monastery-style cheese woven together with the spirit of the Cascades. The flavor is complex without being overly sharp. The texture is smooth, yet firm. High Prairie
A firmer drier body with a mild sharpness that lends itself both to grating and savoring with wine.
Sleeping Beauty
A cheese of many layers. The tasty edible rind is not entirely unlike a brie. Inside lies a supple crumbly interior surrounded by a rich creamy layer. As the cheese ages the creamy layer grows softer and becomes increasingly more flavorful. This is a cheese to be savored with a nice Pinot Noir or dry Chardonnay. Start with a piece of the interior and nibble your way to the outer layer and finish with the rind.
Glacier Blue
If you like Blue cheese with big flavor, this one has flavor the size of a glacier.
